Description

The overseer with a baton sits inside the door. In the brewery two women grind flour, which another man works into dough. Agter a second man treads the dough into mash in a tall vat, it is put into four tall crocks to ferment. After fermentation it is poured off into round jugs with black clay stoppers.

In the bakkery, men crush the grain with pestles, after which it is ground to flour by two women. Men mix dough in tall tubs, and it is shaped into loaves and cakes by others. The four black ovens are each tended by a man with a poker.
